Chocolate French Toast

I LOVE Two Chicks egg whites; they’re so handy, save me filling the house with eggs, are packed full of protein, are low calorie and contain very little fat (making them perfect for post workout treats), so I use them in virtually ALL my baking.

My breakfasts vary, for the weekdays I like to make a delicious, nutritious protein loaf that will see me through the week, or on the days I don’t go to work I like to make a carb and protein loaded bowl of protein zoats (basically oats with grated courgette). At the weekends however, I like to make something a little more interesting. I’ve made protein pancakes and waffles many a time but wanted to try something different, so, my recipe for Chocolate French Toast with a chocolate protein mousse was born and, here is the recipe for you!


You will need:
– 2 slices of bread,
– 100g of egg whites,
– 1 tablespoon of cacao powder,
– 100g of plain yogurt (I used alpro),
– 1 scoop of chocolate protein powder (Whey or vegan),

Simply mix together the egg whites and cacao powder in a large dish. Place your bread in the dish and leave it to soak for around 3 minutes, then turn it over and do the same for the other side.
Now heat a non stick frying pan and place your soaked bread in the pan. Cook on each side for three minutes. Whilst your bread is cooking make the mousse; simply mix together the yogurt and protein powder (may need a little water to aid in mixing).
Now the assembling…

Chop the slices of bread in half diagonally and spread the mousse on one half of each slice. Sandwich the bread together and plate up!

I topped mine with a raw cacao sauce (I mixed together cacao powder, water and date syrup) as well as blueberries and a protein bar. But there are endless topping options… peanut butter would be amazing!
