Healthy Egg Muffins

We absolutely adore this simple, delicious and healthy recipe created by the lovely Lulu’s Healthy Kitchen. All you’ll need is some of our liquid egg products and your favourite fillings!

Makes 12 muffins cheese and tomato

mushroom and pepper

ham and spinach

ham and spring onion

or whatever combination you like

1/2 cup Two Chicks egg white

6 Two Chicks whole egg

3 Cherry tomatoes chopped

1/4 cup red peppers

1/4 cup chopped spinach

1/4 cup spring onions

1/4 cup grated cheddar cheese

1/4 cup chopped ham

1/4 mushrooms

1 tsp ground turmeric

salt & black pepper


Heat oven to 180 fan

Grease a muffin pan with a little melted coconut oil

Chop all ingredients

Fill each muffin cup with chopped veg until 3/4 full

Combine egg mixture and stir to combine (don’t over whisk)

Pour egg mixture into each muffin cup

Bake for 18 to 20 minutes
