Healthy Special Fried Rice

She’s done it again! Our lovely Healthy Chef Steph has created another incredibly tasty, but super healthy recipe. This time Steph shares with us her recipe for ‘Healthy Special Fried Rice’

INGREDIENTS

• 60g wholegrain rice⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 tbsp coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 tbsp soy sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 tbsp teriyaki sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 85g prawns⠀⠀⠀⠀⠀⠀⠀⠀⠀
• vegetables (I used kale, sugar snaps and courgette)⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 50g Two Chicks liquid whole egg⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 50g Two Chicks liquid egg white⠀⠀

DIRECTIONS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
• Follow the packet directions to boil the rice and leave to one side⠀⠀⠀
⠀⠀⠀⠀⠀⠀
• In a pan put the oil, prawns, vegetables, soy sauce and teriyaki sauce, season well and cook through⠀⠀⠀
⠀⠀⠀⠀⠀⠀
• Add the rice and egg and stir well.⠀⠀⠀
⠀⠀⠀⠀⠀⠀
• Add a little lemon and top with seeds and avocado!⠀⠀
