Healthy Sweet Potato Hash Browns

With the Christmas & New Year festivities behind us, we will all be looking to ‘clean up’ our diet and rid our bodies of some of the additional lbs we inevitably gain over the festive period. But that doesn’t mean sucking miserably on a lettuce leaf, oh no! Healthy food blogger Hanna O Connor of @sweatsweetrepeat on Instagram has created this stunning recipe for Healthy Sweet Potato Hash Browns. Perfect to whip up as a nutritious breakfast, brunch, lunch or snack.

Sweet potato hash browns

1/2 medium sweet potato (roasted and mashed (excl. skin)
30g Two Chicks Liquid Egg White
1/2 tsp chopped rosemary

Garlic sauteed spinach
1/2 garlic clove (minced)
1 cup Spinach

Poached egg white
50g Two Chicks Liquid Egg White

Method

1) Begin by poaching the egg white; do this by loosely placing a square of cling film over a bowl/ mug/ cup. Add egg whites into the clingfilm, seal the cling film up at the top by twisting it together. Place in a pan of boiling water and over a medium heat cook for 4 mins. Once cooked, remove from the pan and remove cling film.

2) While the egg is cooking, prepare the sweet potato hash browns.
Mix all ingredients together. Then in a pan, over a medium heat, pour 2/3 Tbsp of the mixture into the pan, once browned and cooked, flip and cook the other side. You should make approx. 3 hash browns.

3) Next, in a pan over a medium heat, sauté the garlic in some olive oil; then add the spinach and cook until just wilted.

4) Time to plate. Place the sweet potato hash browns on a plate, top with the sautéed garlic spinach and poached egg white.

5) Enjoy!
