Peanut Banana Power Cake

When Gauri tagged us in this stunning Peanut Banana Power Cake we knew we HAD to share the recipe with you. Made with all natural ingredients and no refined sugar you can enjoy a slice (or two!) entirely guilt free!

Ingredients:

1 large banana (120g) (+ a little more to decorate)
1 egg
100g Mornflake Oat bran
100ml Alpro Coconut milk
50g Meridian Date syrup
50g Sukrin Peanut flour
20g Two Chick Products egg whites
25g 100% pure organic maple syrup
½ tsp cinnamon
½ tsp baking powder
Pinch of Creative Nature Superfoods pink salt
3g coconut oil (to grease the baking tin)

1. Pre-heat oven to 150 degrees (I used a fan oven)
2. Mash your banana with a fork in a large bowl before adding your egg, egg whites, and coconut milk
3. Whisk thoroughly until all combined (don’t worry if there are small banana lumps!)
4. In a separate bowl, mix your dry ingredients- Oat bran, peanut flour, baking powder, cinnamon, pink salt
5. Combine the dry ingredients with the banana mixture before stirring in your date syrup
6. Line a 6”x 6” baking tin with grease proof paper covered in coconut oil (play particular attention to greasing the corners).
7. Pour your batter into the lined tin before decorating with some banana slices on top
8. Place tin on the middle shelf of your oven and allow the cake to bake for 15 minutes (Cooking times may vary depending on fan assisted/non-fan assisted ovens)
9. To check the cake is cooked, pierce a skewer into the middle of the cake and it should come out clean
10. Place onto a cooling rack and allow to sit for 5 minutes before slicing into 16 delicious slices
11. Pour your maple syrup onto a plate and allow the slices to sit and soak the syrup up before digging in!
