Usually a treat kept for weekends or special occasions, crepes are not something you’d expect to find in a healthy diet – until now! The very talented Hanna O Connor from @sweatsweetrepeat on Instagram has created these stunning protein crepes using our free range liquid egg white!

Ingredients

(recipe makes 3 crepes)

½ Banana

100g Two Chicks Liquig Egg White

1 Tbsp Coconut Flour

½ Scoop (20g) protein powder

1 Tsp Cinnamon

1 Tsp Baking Powder

¼ cup Almond milk (add as much or as little)

Method

In a bowl, using a fork mash the banana up, until a puree is formed.

Add the egg whites and remaining ingredients to the bowl and mix until incorporated.

Heat a pan over a medium/low heat.

Pour 1/3 of the mixture into the pan. Once the top of the pancake has bubbles and no longer looks like raw batter. Flip and cook the other side.

Eat with fruit, nut butter, chocolate, yogurt and so on.

I served mine with almond butter, blueberries, sprinkle of cinnamon and seed mix and also a homemade blueberry compote.
