Sweet Potato Cacao Brownies

Tara Adlestone does it again! Another incredible recipe which ticks both the delicious and healthy box! These indulgent looking brownies might look like they are going to de-rail your diet plan but we promise these little beauties are packed full of goodness so you can enjoy them entirely guilt free!

(recipe makes 9 brownies)

170g cashew butter
2 tablespoons egg whites
2 large sweet potatoes
2 tablespoons cacao powder
1/2 tablespoon chia seeds
2 tablespoons agave nectar honey
1/2 teaspoon baking soda
1 teaspoon vanilla essence

Method:

1. Preheat oven to 180 Celsius.

2. Peel 2 large sweet potatoes and poke holes in them.

3. Line a baking tray with foil and cook the sweet potatoes for 45 minutes

4. Add all the remaining ingredients into a food processor including the sweet potatoes and process until a smooth batter/mixture forms.

5.Line a small square tin with baking paper.

6.Pour batter into the tin.

7.Put in the oven for 30-40 minutes until it ha risen.

8.Cut into squares and serve.
