Egg White Omelette with Mixed Peppers & Chives

Egg White Omelette

Serves: 1 – 2
Difficulty: Easy


– 250g two chicks free range liquid egg white
– 1/2 small yellow pepper finely – chopped
– 1/2 small red pepper finely – chopped
– 1 garlic clove – crushed
– 1 tbs chives – finely chopped
– salt & pepper to taste
– 1/4 avocado sliced
– 1 tsp of hemp seeds
– small pinch of sprouts to garnish


1. Coat a non-stick frying pan with oil or cooking spray.

2. Fry the garlic over a medium heat for 2-3 minutes.

3. Add the peppers and sauté for about 5-6 minutes until softened.

4. Remove from the frying pan and keep warm.

5. Add some more oil or cooking spray to the same frying pan and warm over a medium heat.

6. Add a pinch salt & pepper to the two chicks free range liquid egg white and mix thoroughly.

7. Pour the egg white into the frying pan.

8. Cook until almost set, and then spoon the peppers and chives onto one side of the omelette.

9. Fold the other half over.

10. Slide onto a serving plate.

11. Arrange the sliced avocado on the omelette and sprinkle hemp seeds on top followed by the sprouts for garnish.

12. Serve with a rocket and tomato salad for a gorgeous green burst of goodness!

Naomi’s TIP: Try replacing the chives with parsley or adding a handful of mushrooms or 1/2 a red onion to the pepper mix.
